All grains have different nutritional compositions. Just as important as eating a variety of fruits and vegetables for their unique nutritional contributions, you should be looking for a variety of grains. Each of them will have different types of fibers, proteins, vitamins, minerals and antioxidants as well as different textures, flavors and consistencies. So don't by shy! Branch out and try a new one soon!
Here is a great recipe for some tasty pancakes using uncooked whole wheat.
Blender Whole Wheat Pancakes
Makes 6-8
1 cup milk
1 cup wheat berry kernels, whole and uncooked
2 eggs
2 tbsp applesauce
2 tsp baking powder
1/2 tsp salt
Put milk and wheat in blender. Blend on highest speed for 4-5 minutes or until batter is smooth. Add eggs, applesauce, baking powder and salt. Bake on hot griddle. Top with fruit and a bit of real maple syrup.
So what are your favorite grains?
